These Spinach & Feta Chicken Burgers with Lemony Orzo are a fresh, Mediterranean-inspired meal that comes together with simple ingredients and plenty of flavor. The combination of lean ground chicken, spinach, feta cheese, garlic, and oregano creates burgers that are moist, satisfying, and versatile enough for weeknight dinners, meal prep, or entertaining. Paired with a light lemony orzo, this balanced meal is a great example of how healthy eating can feel approachable, flavorful, and realistic for everyday life.

Spinach and Feta Chicken Burgers

These Spinach & Feta Chicken burgers are a Mediterranean-inspired favorite! The addition of the spinach, feta, and fresh herbs make the perfect elevated burger for busy weeknights and even lunches the next day. They freeze well too!

Ingredients

  • 1- pound fresh spinach leaves
  • 1 pound of ground chicken
  • 4 ounces of feta cheese crumbled
  • ¼ c. breadcrumbs
  • 1 medium onion chopped fine
  • 4 cloves garlic minced
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp oregano
  • optional 4 whole-grain buns

Instructions

  • Chop washed spinach, and sauté in 1 tsp of olive oil until wilted, allow to cool.
  • Preheat grill to medium high.
  • Place ground chicken in a large bowl.  Gently crumble the feta and add to the
  • bowl along with the breadcrumbs, chopped onion, spinach, minced garlic, salt,
  • pepper and oregano
  • Divide into 6 equal portions and form into patties.
  • Sprinkle both sides with kosher salt and freshly cracked black pepper.
  • Place on preheated grill and cook for 4-5 minutes on each side or until they reach
  • an internal temperature of 160 degrees.

Notes

This recipe is a favorite for me, because it is so versatile!   
To make Spinach Feta Chicken Meatballs
Scoop even portions onto a parchment-lined sheet pan, roll into balls, and drizzle 1/4 tsp of olive oil on top. Bake in a preheated 375-degree oven on the bottom rack for 7 minutes, turn over, and bake for 7-10 more minutes until nicely browned.  
Serve over lemony orzo, fresh arugula, or as an appetizer with tzatziki sauce.                          
Leftovers store well and can be enjoyed for lunches throughout the week.

Lemony Orzo

A light flavored side dish adds brightness to any meal.

Ingredients

  • 1 3/4 cups chicken or vegetable broth
  • 1 cup orzo
  • 2 cloves garlic sliced thin
  • 1 T fresh parsley washed, dried, chopped fine
  • 2 T olive oil

Instructions

  • Add olive oil to a medium saucepan or skillet.
  • Over medium low heat, add orzo and stir until well-coated.
  • Add garlic and saute for another minute longer.
  • Add broth and bring to a boil. Add lemon juice, then lower the heat to a simmer, cover and cook for 8-9 minutes or until liquid is absorbed and orzo is tender.
  • If it is still to firm to the bite; add a little more liquid and simmer for another minute.
  • Remove from heat; fluff with a fork and sprinkle the parsley on top.

Notes

This light lemony orzo pairs well with chicken, seafood, or Mediterranean-inspired dishes like these Spinach & Feta Chicken Meatballs.
Leftovers can be enjoyed cold as a pasta salad or reheated with a splash of broth or lemon juice to refresh the texture.
