Ingredients
1 3/4cupschicken or vegetable broth
1cuporzo
2cloves garlicsliced thin
1Tfresh parsleywashed, dried, chopped fine
2Tolive oil
Instructions
Add olive oil to a medium saucepan or skillet.
Over medium low heat, add orzo and stir until well-coated.
Add garlic and saute for another minute longer.
Add broth and bring to a boil. Add lemon juice, then lower the heat to a simmer, cover and cook for 8-9 minutes or until liquid is absorbed and orzo is tender.
If it is still to firm to the bite; add a little more liquid and simmer for another minute.
Remove from heat; fluff with a fork and sprinkle the parsley on top.
