Spinach and Feta Chicken Burgers

These Spinach & Feta Chicken burgers are a Mediterranean-inspired favorite! The addition of the spinach, feta, and fresh herbs make the perfect elevated burger for busy weeknights and even lunches the next day. They freeze well too!

Ingredients

  • 1- pound fresh spinach leaves
  • 1 pound of ground chicken
  • 4 ounces of feta cheese crumbled
  • ¼ c. breadcrumbs
  • 1 medium onion chopped fine
  • 4 cloves garlic minced
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp oregano
  • optional 4 whole-grain buns

Instructions

  • Chop washed spinach, and sauté in 1 tsp of olive oil until wilted, allow to cool.
  • Preheat grill to medium high.
  • Place ground chicken in a large bowl.  Gently crumble the feta and add to the
  • bowl along with the breadcrumbs, chopped onion, spinach, minced garlic, salt,
  • pepper and oregano
  • Divide into 6 equal portions and form into patties.
  • Sprinkle both sides with kosher salt and freshly cracked black pepper.
  • Place on preheated grill and cook for 4-5 minutes on each side or until they reach
  • an internal temperature of 160 degrees.

Notes

This recipe is a favorite for me, because it is so versatile!   
To make Spinach Feta Chicken Meatballs
Scoop even portions onto a parchment-lined sheet pan, roll into balls, and drizzle 1/4 tsp of olive oil on top. Bake in a preheated 375-degree oven on the bottom rack for 7 minutes, turn over, and bake for 7-10 more minutes until nicely browned.  
Serve over lemony orzo, fresh arugula, or as an appetizer with tzatziki sauce.                          
Leftovers store well and can be enjoyed for lunches throughout the week.
