Over the holiday weekend, my daughter made non-alcoholic mojitos. I asked her to make mine without the simple syrup, and we were pleasantly surprised by how refreshing it was. The Fresh Mint & Lime Sparkler quickly became our favorite summer drink! With just fresh mint, lime, and sparkling water, it was crisp, flavorful, and all it needed. It’s become one of my favorite ways to enjoy the fresh mint growing in our garden and a refreshing reminder that simple ingredients often make the most satisfying recipes.

Fresh Mint & Lime Sparkler
Ingredients
- 8 ounces chilled club soda or sparkling water
- Juice of ¼ fresh lime
- 5 –7 fresh mint leaves
- Lime wedge and fresh mint sprig for garnish (optional)
Instructions
- Muddle mint; use a cocktail muddler, a mortar and pestle, or the back of a spoon. You just want to gently release the oils. Don't over-crush the leaves; they can become bitter.

- Add the mint leaves to a 10 oz cocktail glass.
- Add the club soda. and fresh-squeezed lime juice, and gently stir.
- Add ice cubes, and garnish with fresh mint leaves, and extra lime wedges.
