Sweet Potato Hash

Sweet Potato Hash

A Sweet and Savory Fall Favorite

Roasted Sweet Potato Hash is one of my favorite recipes to cook during the fall. Their natural sweetness pairs beautifully with savory ingredients like onions, garlic, shallots, and herbs.

This Sweet Potato Hash isn’t your typical hash! Roasting the sweet potatoes brings out their natural sweetness, while sautéing the aromatics separately adds another layer of flavor. I like to leave the skins on for extra texture and fiber, and cutting the potatoes into uniform pieces helps them cook evenly.

Colorful, hearty, and full of flavor, this versatile side dish makes a delicious addition to your fall table. It’s equally at home alongside a weeknight dinner or as part of a weekend brunch!

Ingredients

  • 4 sweet potatoes; washed and diced into ½” cubes
  • 1 medium onion diced
  • 2 T shallot diced fine
  • 2 cloves garlic minced
  • 1 tsp salt
  • ½ tsp freshly cracked pepper
  • 1 T. fresh parsley chopped
  • 1 tsp paprika not smoked
  • 1 1/2 T olive oil divided

Instructions

  • Toss the sweet potatoes with 1 T of olive oil, salt, pepper, and paprika in a large bowl.
  • Add to a large casserole dish, then add the salt, pepper, parsley, and paprika.
  • Roast for one hour, stir every 10-15 minutes.
  • In a small sauté pan, add 2 tsp of olive oil and sauté the onion and shallots for 5 minutes. Then add the garlic and cook for two more minutes.
  • Remove the sweet potatoes from the oven and gently combine the garlic and onions with the potatoes.

Notes

Dietitian Tip: Sweet potatoes provide fiber, potassium, and beta-carotene, which the body converts to vitamin A. Keeping the skins on adds additional fiber. Pair this hash with a protein-rich food, such as eggs, chicken, or beans, to help create a balanced meal.
