Fresh Mango Salsa: Sweet, Zesty & Perfect for Spring

Sometimes the simplest recipes bring the biggest flavor — this fresh mango salsa is a perfect example. It’s bright, refreshing, and incredibly versatile. Whether you spoon it over grilled chicken or fish, serve it with whole-grain chips, or add it to tacos, this quick salsa adds color and a healthy burst of flavor to your plate.
Made with just a handful of ingredients — ripe mango, red onion, lime, and cilantro — this recipe is as easy as it is delicious. Add a touch of finely chopped jalapeño for heat if you like a little kick. It’s the kind of recipe you can whip up in minutes, but it looks and tastes like something special.

Ingredients:
2 mangos, diced
¼ cup red onion, diced fine
1 lime, juiced
2 T. fresh cilantro, chopped
(Optional) 1-3 tsp finely chopped jalapeño (depending on your preference)
Directions:
- Wash mangos and dry with paper towels.
- Peel and dice the mango, and add to a medium bowl.

Use a mango peeler to separate the stone from the fruit.

Then carefully score the flesh in both directions, making a “cross-hatch” in the fruit until the knife touches the peel.
3. Add onion, cilantro, jalapeño, and lime juice.
4. Toss and serve with grilled chicken, fish, pork, or pita chips.

Tips:
Use ripe mangoes that give slightly when pressed for the best sweetness.
Let the salsa sit for 10–15 minutes before serving to let the flavors mingle.
For variation, try adding diced cucumber or red bell pepper.
This mango salsa is a great way to eat more fruit and herbs while adding flavor without heavy sauces or dressings. It’s proof that eating well can be vibrant, satisfying, and delicious. You may know that mangoes are an excellent source of Vitamin C, but they are also high in copper and folate and contain polyphenols that act as antioxidants in our bodies.
Make it, share it, and you will stay on the path to wellness.
Enjoy!
