1large fennel bulbthinly sliced
2tablespoonsolive oil
10–12 cups fresh baby spinach
1large orangeor 2 mandarins, segmented
¼cupsliced almondslightly toasted
1tablespoonfresh lemon juice
½teaspoonkosher salt
Freshly ground black pepper
Instructions
Heat olive oil in a large skillet over medium heat.
Add the sliced fennel and sauté for 4–5 minutes, until slightly tender.
Add spinach and a pinch of salt; cook just until wilted--do not overcook.
Remove from heat and drizzle with lemon juice.
Transfer to a serving bowl and top with orange segments and toasted almonds.
