Ingredients

  • 2 cups cooked turkey breast shredded
  • 1 cup cooked brown rice or quinoa
  • 1 red bell pepper diced
  • 1 cup roasted corn or frozen, thawed
  • 1 cup black beans rinsed
  • 1 cup cherry tomatoes halved
  • ½ cup salsa
  • 1 avocado diced
  • ¼ cup fresh cilantro
  • Juice of 1 lime
  • 1 tsp cumin
  • Salt & pepper

Instructions
