Herbed Farro Salad with Snap Peas & Feta

Ingredients

  • 1 cup farro
  • 1 cup sugar snap peas trimmed and halved
  • ½ cup radishes thinly sliced
  • ½ English cucumber diced
  • ¼ cup chopped fresh parsley
  • 2 tbsp chopped fresh mint
  • ½ cup crumbled feta
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • Salt & pepper to taste

Instructions

  • Cook farro according to package directions. Drain and cool.
  • Blanch snap peas in boiling water (2 mins), then shock in ice water.
  • In a large bowl, combine farro, peas, radishes, cucumber, herbs, and feta.
  • Whisk olive oil, lemon juice, Dijon, salt & pepper; pour over salad and toss. Chill before serving.
