Notes

Dietitian's Tip:  Roasting vegetables over high heat brings out their natural flavors. Be sure that the broccoli is completely dry after washing to prevent it from steaming instead of roasting and browning
Dietitian Tip: Broccoli is a nutrient-rich cruciferous vegetable that provides fiber, vitamin C, vitamin K, and beneficial plant compounds. Roasting enhances its natural flavor, making it an appealing way to include more vegetables in your meals. A little olive oil and freshly grated Parmesan go a long way toward creating a delicious side dish without the need for a heavy sauce.
Cook's tip: For the best results, dry the broccoli thoroughly after washing and spread the florets in a single layer on the baking sheet. Avoid overcrowding, which can cause the broccoli to steam rather than roast. Add the minced garlic during the last several minutes of cooking to prevent it from burning.
